Does anyone have recs for good spots for sport or trad climbing in December? Hoping to hit somewhere that is too cold. Ideally 3 hours or less from Denver/Boulder Area.

Well, any south to south west facing crag will do, especially those that have a view of the sunset to extend the short days and don't receive an afternoon mountain shadow.  Blob and Plotinus in bocan, eldo, lots of south platte, lumpy.  So many more.

Melting snow running down the wall will be your biggest challenge. Pick a S. facing wall (there's tons of them) and wait a for a few sunny days after a snow event. You can climb all winter here.

Lots of dream canyon is still in great shape this time of year. Between the Wall of Winter Warmth and Lost Angel there’s enough to keep most climbers occupied for an offseason.

Unaweep granite outside GJ is as good as it gets in my opinion for winter climbing. However slightly further then your 3 hour distance. If you decide to come I could point ya in the proper direction.

A few off the top of my head-

North Table - Sport and Trad

Castlewood Canyon - sport and trad

Duncan’s Ridge  (easy trad)

Staunton state park - Never winter wall (sport, lots of good 5.10 routes and worth going for one day over the winter)

Big Thompson - The Ledges (Sport)

CCC - graveyard, Death Valley, dog house, other critters, etc  at Tunnel 5 (sport, don’t even bother on a weekend though)

Boulder Canyon - surprising crag (sport)

This is a pretty good list.  You just have to time it by the sun.
Last winter I got 3 good and surprisingly warm days on The Ledges before climbing that out completely.

Guideline #1: Don't be a jerk.
