Recommendations for low-risk, moderate-challenge, winter summits in Idaho

Hi all,
I've been in Boise for a year and I am getting the itch to explore some winter summits.
I am a strong hiker and have a good amount of winter experience, but I haven't been able to do anything ambitious for the past three years.

I'd appreciate any recommendations for beautiful winter lines in low-risk terrain. The closer to Boise the better, but I'm willing to drive if needed.
