I am planning to build an adjustable angle moon board and would like some advice on what works well for a hinge.

I plan to have 2 or 3 chains mounted to the wall to handle the adjustment, with a future wench to do the hard work.

Get the wench first.

I figure the AC wench from harbour freight should work nicely

Heard Ben Moon on the Power Company podcast- sounds like he is coming out with a 10 degree MB with a different set of holds.

Supply your own wench unfortunately.

Are others with adjustable climbing walls just using door hinges? Or is there some other option?

get a hole saw and a 2"+ wood dowel. Super cheap and very effective

I used door hinges in the past, worked well. Just get the biggest ones (4) you can find at HD or Lowes.

Guideline #1: Don't be a jerk.
