3 seat van conversion

Wondering if anyone out there has experience converting a chevy express 3500 (or similar) into a livable van (bed/s, sink, stove etc) while maintain a single or bench seat behind the driver seat. If so, Id love to see your layout. Having the rear seat really cuts into living space but we are going to be travelling with our 4 year old so the rear seat is mandatory. We are considering this as setup, with one of the raise/lower poptops. We have a bunch of ideas of how we'd lay it out but would love to see yours. Thanks.

https://www.youtube.com/watch?v=7a-aDglpy9s  We have a 2003 version of one of these with 2 rugrats.  It's a less cramped version of a VW.  Have put 100s of nights in it.  Can't imagine a more versatile practical layout.

thanks for the reply. is it a big pain having the kids seat so far back from the drive/passenger? othewise i like the setup. would like to do a lot of the build out on my own.
