Temperature should be fine at Kalymnos, but December is rainy: https://en.climate-data.org/location/717906/

Hawaii is pretty good that time of the year. Average temps at the crag would be about 75F. You can also go surfing in 77-degree water in December and the winter swells come in to make Waimea's surfing the best in the world.

St. George and Vegas are great that time of year, and St. George has tons of free camping right out of town.

Not personal experience, but a lot of people suggest Peloponnese region as winter climbing destination, rather than Kalymnos. And specifically areas around Leonidio supposed to be good in winter, and some crags near Nafplio.

any suggestions for winter climbing in southern (Mediterranean) France, and Southern Spain? (any specific locals?)

Southern Spain: El Chorro.

Catalunya is North East, closer to Barcelona than Southern Spain. But December/January there was very nice. We stayed in Cornudella, and climbed in Siurana, Margalef, and Montsant.

One of the best place in Greece to go climbing during the winter months is Leonidio.

Check this website with many details about Leonidio:

Joshua tree is so good then just fined the sunny spots.
