Zion has some wonderful short hikes. See if the rangers are leading any nature hikes.

There's some sweet mountain biking in the St. George and Zion area (not in the NP but outside)

Go caving at Bloomington Cave.

Meadow hot springs are some of the coolest you will ever find. Tons of biking and really cool dinosaur stuff for the kids.

FYI- The Merry Wives Cafe is closed for business, but why not drive through Colorado City, and head out to Toroweap? It's such a beautiful, and historical area. You can stand where John Wesley Powell, and his men stood when they were looking for their lost men. There's camping there which is actually quite nice.

Also, for a shorter day, go to Gold Butte, NV, and hike to some awesome petrogylphs like Newspaper Rock the infamous Falling Man petroglyph.
