At the Harry Daley Base, Yosemite Valley.

What's better for Turkey Day cragging, New River Gorge or Red River Gorge?

I'm driving from NYC. I like sport or trad, dirtbag camping, and I'll probably be looking for a partner(s).

Either one. They both have all your prerequisites. "Better" could depend on weather. I have been "cold" at the Red for Thanksgiving but still managed to climb. Maybe check weather prior to the trip and see what looks better.

I went to the RRG last year for Thanksgiving and it was great - the weather, people, climbing. It was a bit crowded in areas, but still made for a good time. Lots of sport and trad routes to choose from. If you go to the RRG, you have to do Thanksgiving dinner Miquels Pizza.

I am heading to Enchanted Rock for Turkey Day this year. woot!

My personal favorite is the New. Most of the trad areas like Endless Wall, Beauty mtn, Bridge area, Junkyard, and Bubba city are all (mostly) south facing and warm. Endless wall has an endless amount of stellar crack climbing, and if you're into this sort of thing... clip ups. Don't think there is much dirtbag camping anywhere at the New though.
