| Mike, laws pertaining to spirits are still antiquated. Beer and wine are treated differently. Still against the law to produce spirits for home use without a permit. Crazy.
All whiskey is required by law to be barrel aged before it is considered whiskey. No amount of aging is specified but a min. of 2 years is standard. This is why most micros(as I will) also make gin,vodka,shine, rum etc.. as these do not have the same requirement.

There might be no minimum time specified for aging whiskey, but there is certainly a minimum of 3 years of aging for Whisky ;) |

| Jb yes you use juniper berries and various herbs. The herbs differ with the maker. Some use citrus components as well. Some use hops. |

Also can use spruce tips. Look for the light green soft juicy tender ones in the spring, at the very tip of the branch. |
