I have a schedule that is keeping me from taking the recommended 2 days off between hangboard sessions during the strength phase I am in right now. My question is, is it better to take 1 day off or 3 days off between sessions?

Take the three days. It's better to have been well rested than hardly at all especially when it comes to finger strength. It's really easy to hurt yourself without adequate down time.

Yep.

If I can't do two days, I will sometimes alternate between 1 and 3. I will focus on trying to bump up my weights more significantly on the long-rest sessions

If you have some flexibility or don't mind early mornings you could also consider doing morning workout, rest day, then an evening workout. The number of days is a pretty loose measurement. Number of hours allows you to break it down a little more. Instead of 2 rest days, maybe you get 1.7 (which is a lot better than just 1).

Maybe, maybe not.

My measure is the number of "sleeps" between workouts because that's when your body regenerates and grows stronger. Granted there is some recovery during the day but, as I remember, most recovery (muscle regeneration and growth) occurs while sleeping.

For example, after a hard workout, I take two days off, which is three sleeps, before another workout or hard day of climbing. The first day can be light recovery exercise (swimming, walking, antagonistics, etc.) but the second day is pure sloth.
Guideline #1: Don't be a jerk.
